This Rainbow Veggie Bowl is a perfect example of how you can customize a recipe to your liking or to what you have on hand. Isn’t that ideal? As great as having a free range of possibilities is, we recommend you do follow a simple formula. Grain/Protein + Veggies + Dressing. This trifecta will make it super easy to whip a colorful and filling bowl like this one without giving it much thought. Fun, right?
There are many great options to include or replace in this colorful and nutritious bowl. When it comes to grains there are so many great varieties. You could use millet, basmati rice, amaranth, or barley. We encourage you to try different kinds of grains and find your favorites (keep your eyes open for good sales!).
When it comes to veggies, the sky’s the limit. So many amazing options to choose from, whether raw or cooked (you could use a mix of both). Raw goodies: grated red cabbage or carrots, chopped tomatoes, and sliced avocado. Cooked veggies: steamed corn or peas, sauteed mushrooms and kale, grilled peppers, and zucchini slices. Take your pick. Let us know your favorite combos!

This green dressing is so good, you can use it for any other preparation you like. It goes so well with salads or over some grilled veggies, and it’s made with one wholesome ingredient. We love it!

Ingredients
Scale
1 cup of cooked brown rice or quinoa
Your favorite colorful veggies, cooked to your liking
For the cilantro tahini dressing:
½ cup of tahini
½ cup of water
¼ cup of lemon juice
2 garlic cloves, chopped
6 sprigs of cilantro
1 tablespoon of soy sauce
1 tablespoon of fresh ginger
Handful of spinach
½ teaspoon of salt
¼ teaspoon of sugar
Instructions
To prepare the tahini dressing, add all the ingredients to a blender and mix until smooth and creamy.
To assemble your rainbow veggie bowl, layer cooked grains, veggies of your choice, marinated tofu, and cilantro dressing. Bon Appetit!
