I looove sugar cookies. The recipe is so simple, they bake quickly, and you can decorate to your hearts content! I got this recipe from Chole Coscarelli's book Chole's Vegan Desserts. The only tweak I made was adding vanilla to the icing. If you have a food processor this is amazingly easy. I'd never made cookie dough in a processor before, now I'll never do it by hand again!
In food processor, combine flour, sugar, and baking soda. Add margarine, 3 Tablesppons water, and vanilla. Pulse until doughy and add more water if needed.
Stick the dough in the fridge for 5-10 minutes while you dust a work surface with flour. Roll out half the dough about ¼ inch thick and cut out shapes with a cookie cutter. Leave a good amount of space between cookies (on a splat sheet or backing parchment paper) I didn't leave room and some baked into each other.
Bake 10-12 minutes or until the edges brown. I turned my pans around after 5 minutes and the larger pan took almost 20 minutes to bake...I made them a little thick.
You can ice the cookies after they are completely cooled.
For the icing: Combine all ingredients adding the powdered sugar 1 cup at a time. Use a food processor or hand mixer whisk
*The icing makes a lot so maybe halve it unless you're making a lot of cookies
