Aaron’s Grandma’s Vegan Banana Bread

Don't let those brown and spotty bananas go to waste! You can bake this delicious and easy vegan banana bread and enjoy with the family!

Ingredients

– 1/3 C of vegan margarine, plus more for greasing – 1/2 C of granulated sugar – 1 tsp of baking powder – 1/2 tsp of baking soda – 1/2 tsp of salt – 1/2 C of unsweetened applesauce – 1 3/4 C of whole wheat or all-purpose flour – 1 C of mashed ripe bananas about 2–3 bananas – 1/2 C of chopped walnuts optional – 1/2 C of semi-sweet chocolate chips optional

Preheat the oven to 350 degrees F (170 degrees C), and grease a loaf pan. In a mixing bowl, beat the margarine and sugar until the mixture is fluffy and pale.

Mix in the baking powder, baking soda, salt, and applesauce. Add the flour and bananas alternately, adding 1/2 cup flour and 1/4 cup banana at a time, starting with the flour. Mix well after each addition.

Spoon the batter into the loaf pan. Bake for 1 hour or until the bread turnsgolden brown.
