Preheat the oven to 350 degrees F.Using a vegetable peeler, slice the carrots into long thin strips and put them into a large bowl. Add the oil and spices and mix until coated.
Put them onto a baking sheet in a single layer. Bake for 7 minutes, remove from the oven and flip them, and bake for another 7 minutes. Keep an eye on them in the second round to make sure they don't burn.
