Baked Carrot Fries/Chips

These healthy, low-carb carrot chips/carrot fries are baked until crisp and lightly caramelized, perfect for enjoying as a side or snack!

Ingredients

– 3 carrots – 1 ½ tsp of olive oil – A pinch of salt – A pinch of pepper – A pinch of thyme

Preheat the oven to 350 degrees F. Using a vegetable peeler, slice the carrots into long thin strips and put them into a large bowl. Add the oil and spices and mix until coated.

Put them onto a baking sheet in a single layer.

 Put them onto a baking sheet in a single layer. Bake for 7 minutes, remove from the oven and flip them, and bake for another 7 minutes. Keep an eye on them in the second round to make sure they don't burn.

Allow to cool and crisp a little before serving.
