Brown Quinoa Chipotle Bowl

How would you feel about a 5-minute super healthy recipe? I thought so! Check out this brown quinoa chipotle bowl, it is so yummy and full color!

Ingredients

– 10 oz of Path of Life (almost) Scratch Brown Rice & Quinoa – 1 1/2 tbsp of fresh lemon juice – 1 1/2 tbsp of fresh lime juice – 2 tbsp of packed freshly minced cilantro – 15 oz of black beans, drained – 3/4 C of corn kernels – 1 large avocado, pitted and sliced – 2 C shredded lettuce – 2 roma tomatoes, diced – 1/2 C of diced red onion – 1 jalapeno, sliced (optional) – Hot sauce, optional

Cook the Path of Life (almost) Scratch Brown Rice & Quinoa according to the package instructions.

Stir in lime and lemon juice and minced cilantro.

To assemble, add about ¾ cup of Path of Life (almost) Scratch Brown Rice & Quinoa to three bowls, top each bowl with ½ cup of black beans, ¼ cup of corn kernels, ⅓ of the avocado slices, lettuce, tomatoes, red onion, and jalapeno (if using). Drizzle with hot sauce, if using.
