Brown Rice Veggie Stir Fry

– 1 C of brown rice – 2 C of water – 1 tsp of Knorr® Selects Vegetable Granulated Bouillon – 1 tbsp of vegetable oil – 1 small yellow onion, diced – 1 red bell pepper, diced – 3 cloves of garlic, minced – 1 C of frozen broccoli florets – 16 oz of extra firm tofu, cut into ½-inch cubes

Mix together the rice, water and Knorr® Selects Vegetable Granulated Bouillon in a medium pot with a lid.

Over high heat, bring to a boil. Cover with lid and reduce the heat to low. Cook for 40 minutes. Remove from heat and set aside.

In a large pan over medium-high heat, heat oil. Add the onion, bell pepper, garlic, broccoli, and tofu, and sauté for 4 to 5 minutes, until veggies become tender. Stir in the cooked rice and cook for 5 more minutes.
