– 1 C of brown rice– 2 C of water– 1 tsp of Knorr® Selects Vegetable Granulated Bouillon– 1 tbsp of vegetable oil– 1 small yellow onion, diced– 1 red bell pepper, diced– 3 cloves of garlic, minced– 1 C of frozen broccoli florets– 16 oz of extra firm tofu, cut into ½-inch cubes
In a large pan over medium-high heat, heat oil. Add the onion, bell pepper, garlic, broccoli, and tofu, and sauté for 4 to 5 minutes, until veggies become tender.Stir in the cooked rice and cook for 5 more minutes.
