California Walnut Chorizo Meat

Walnuts are super heart-healthy and because of their good fats, they make an amazing meat substitute.

Ingredients

– 2 C of California walnuts – 15 oz of garbanzo  beans, drained – 1/4 C of vegetable oil – 1/2 Tbsp of white vinegar – 2 tsp of salt – 2 1/2 tsp of dried oregano – 2 tsp of ground chipotle – 2 Tbsp of ground cumin – 2 tsp of ground  coriander – 2 tsp of nutritional yeast (optional)

Combine all ingredients in a food processor and pulse until walnuts are the size of a grain of rice.

Transfer walnut chorizo to a skillet and cook on medium-low heat until warmed through.

Serve warm or reserve until ready to use.
