Carrot Fries

Sweet carrots touched with salt is the perfect side dish. Mix and match interesting spices if you have them in the house.


– 2-4 Carrots, sliced with a peeler into long strips – 1 1/2 tsp of olive oil  – Spice to taste - I used a healthy pinch of salt, pepper, and thyme

Using a vegetable peeler, slice the carrots into long thin strips and put into a large bowl.

Add the oil and spices and mix until coated. Put them onto a baking sheet in a single layer.

Bake at 350 for 7 minutes, remove from the oven and flip them, and bake for another 7 minutes. Keep an eye on them in the second round to make sure they don't burn! Allow to cool and crisp a little before serving.
