Cheesy Quinoa Bowl

This amazing cheesy quinoa bowl is the perfect lunch when you're craving something indulgent but don't have any time to prepare it. Dig in!

Ingredients

– 2 C of cooked quinoa – 15 oz of black beans, drained and rinsed – 1 C of diced tomatoes (or halved cherry tomatoes) – 1/2 C of diced red onion – 2 Tbsp of minced cilantro – 1 large avocado, pitted and sliced – Tortilla chips (optional) – 1 1/2 C of Wayfare  Jalapeno Cheddar Nacho Cheese sauce

Prepare Wayfare Jalapeno Cheddar Nacho Cheese according to package instructions and set aside.

In each of two standard-size bowls, add 1 cup of cooked quinoa, ¾ cup of black beans, ½ cup of tomatoes, ¼ cup of diced red onion, 1 tablespoon of minced cilantro, ½ of an avocado, and tortilla chips (if using).

Drizzle the melted Wayfare Jalapeno Cheddar Nacho Cheese sauce and serve immediately. Eat, share and enjoy!
