Chickpea Sweet Potato Boats

You can make an entire meal out of just a few ingredients like these sweet potato boats. They are full of powerful nutrients and don’t take a lot of effort to create.


– 2 sweet potatoes, washed and pat dried – 1 tbsp of olive oil – 15 oz of chickpeas, drained and rinsed – 1 tsp of paprika – 1 tsp of salt – 1/2 C marinara sauce – 1 C of sunflower sprouts

Preheat oven to 375°F. Slice sweet potatoes in half and brush with oil. Place sweet potatoes facing upwards on a baking sheet and bake for 30 minutes or until insides are soft.

Add chickpeas to a separate baking sheet and sprinkle with salt and paprika. Bake for 10 minutes or until started to turn golden.

Remove sweet potatoes and chickpeas from oven. Spread the tops with marinara sauce. Add the sprouts and then chickpeas on top. Serve warm.
