– 2 medium cucumbers peeled and diced
– Juice of 1 lemon or 2 limes
– ½ of a small red onion minced
– 2 tbsp of olive oil
– A decent-sized handful of cilantro chopped
– 1-2 chiles jalapeños, serranos, etc. - just make sure you taste a little piece before you add it to check the heat level; or 3/4 too red chile flakes
– Salt and pepper
