– 1 tbsp ground flax seeds– 2 ½ tbsp warm water– 1 C brown sugar– ½ C granulated sugar– 1 C room temperature vegan butter– 2 tsp vanilla extract– 1 tsp peppermint extract– 1 tsp baking soda– 2 ¼ C all-purpose flour– ½ C cocoa powder– ½ tsp salt– 1 C vegan semi-sweet chocolate chips
In a large bowl, beat together the sugar and vegan butter.Mix in the vanilla, peppermint, flax mixture, baking soda, flour, cocoa powder, and salt. You can mix by hand or with an electric mixer.
