Double Chocolate Chip Peppermint Cookies 

These double chocolate chip peppermint cookies are soft, chewy, and perfect for the holidays!

Ingredients

– 1 tbsp ground flax seeds – 2 ½ tbsp warm water – 1 C brown sugar – ½ C granulated sugar – 1 C room temperature vegan butter – 2 tsp vanilla extract – 1 tsp peppermint extract – 1 tsp baking soda – 2 ¼ C all-purpose flour – ½ C cocoa powder – ½ tsp salt – 1 C vegan semi-sweet chocolate chips

Preheat oven to 375 degrees F. In a small bowl, beat together the flax meal and water for 1 minute. Place in refrigerator for 5 minutes.

In a large bowl, beat together the sugar and vegan butter. Mix in the vanilla, peppermint, flax mixture, baking soda, flour, cocoa powder, and salt. You can mix by hand or with an electric mixer.

Using a spoon/spatula, stir in the chocolate chips.

Scoop dough onto a lightly oiled baking sheet by the tablespoon. Bake for 10 minutes and allow to cool before eating.
