– 1 15-oz can garbanzo beans– 1 bunch of green onions finely chopped– 2 to 3 garlic cloves finely chopped– ¼ C of fresh Italian parsley chopped– ½ of a lemon juiced– 1 tsp of olive oil– 1 tsp of coriander– 1 tbsp of cumin– ½ tsp of crushed red pepper– 3 tbsp of potato starch– 1 tsp baking powder– Salt & pepper to taste
Preheat your oven to 350 degrees F (177 degrees C).Drain and rinse the garbanzo beans. Place them in the bowl of a food processor, wiz on high for 20 seconds.
Use a spoon, scoop out a golf-ball-sized piece and place it on a parchment paper-lined baking sheet. Line out the entire batch, about 10-12 balls. Slightly flatten with your palm or a spatula.
