Easy Vegan Blueberry Banana Muffins

Blueberry banana muffins are my absolute favorite. Whip up a batch of these over the weekend and enjoy them throughout the week.


– 1 ½ C of mashed ripe bananas (about 3 medium bananas) – ¼ C of granulated sugar – ⅓ C of canola or vegetable oil, plus more for greasing – 1 tsp of baking powder – 1 tsp of baking soda – ½ tsp of salt – 1 ½ C of whole wheat or all-purpose flour – 1 C of fresh or frozen blueberries

Preheat the oven to 375 degrees, and lightly grease a muffin tin. Place the mashed bananas in a large bowl.

Add the sugar, oil, baking powder, baking soda, salt, and flour, and gently mix together until well combined. Fold the blueberries into the batter.

Spoon the batter into the muffin tin, filling each cup to the top. Bake for 25 minutes or until the muffins are golden brown.
