Easy Vegan Mushroom Sandwich

– 5 oz of oyster mushrooms – 1/2 oz of baby spinach – A couple of cherry tomatoes – 1 tbsp of barbecue sauce – 2 slices of your favorite bread

The only thing here that requires cooking are the mushrooms. Tear them into thin strips and cook them on the grill pan, with some olive oil. It takes 5 minutes!

Season them with salt and pepper and toss them in some BBQ sauce so they get nicely coated. Assemble your sandwich and enjoy!
