– 1 C of uncooked quinoa– 2 1/4 C of water, divided– 1/4 C of tahini– 2 1/2 Tbsp of freshly squeezed orange juice (regular OJ will work)– 1 Tbsp of soy sauce– 1 Tbsp of agave– 1/2-1 tsp of hot sauce, depending on heat preference (optional)– 1/2 tsp of minced ginger– 1 head of broccoli, steamed and quartered– 1 head of broccoli, steamed and quartered– 3 C of spinach, steamed or fresh– 1 large avocado, pitted and diced
Add the quinoa and 2 cups of water to a medium pot with a lid. Over high heat, bring to a boil. Cover with the lid and reduce the heat to low.Cook for 20 minutes. Remove from the heat and fluff with a fork.
While the quinoa is cooking, whisk together the peanut butter or tahini, ¼ cup water, orange juice, soy sauce, agave, hot sauce (if using), and minced ginger in a medium bowl until well-combined and creamy.
