Japanese  Carrot-Ginger Salad Dressing

If you are looking to amp up your salad dressing game, then this Japanese Carrot-Ginger Salad Dressing will be the perfect recipe to do it with!

Ingredients

– 1 C of carrots cut into 1-inch sections (or use baby-cut carrots) – ½ C of water – 3 tbsp of minced fresh ginger – 1 tbsp of rice vinegar – 1 tbsp of soy sauce – ½ tbsp of neutral oil canola, vegetable, etc. – 1 tsp of sugar – ½ tsp of salt

Put the carrots in a bowl, add the water, cover with a plate, and microwave for 5 minutes. Alternately, put the carrots and water in a small pot, bring to a boil, and simmer, covered, for 5 minutes or until the carrots are cooked through.

Add the carrots, water, and remaining ingredients to a blender, and puree until smooth. Refrigerate until cold.
