– 5-6 medium yukon gold potatoes, cubed (no need to peel)
– 2 cloves garlic, finely chopped
– 1 medium onion, chopped
– 1-2 Tbsp of neutral oil (avocado, grape seed, canola)

– 1/8 C of ketchup
– 1 tsp of paprika
– 1 tsp of salt
