Lima Bean Vegan Sausage

This Lima Bean Vegan Sausage is an excellent addition to your breakfast or brunch rotation. Enjoy these juicy, firm, and flavorful vegan sausage patties packed with wholesome ingredients done in just 25 minutes. It's quick, easy, and very healthy!

Ingredients

– 10 oz of frozen lima beans, thawed – ¾ C of vegetable broth – ½ tsp of ground dried sage – ½ tsp of dried rosemary leaves, crumbled – ¼ tsp of salt – ½ tsp of garlic powder (optional) – ½ tsp smoked paprika (optional) – pinch of pepper – 6 tbsp of cornmeal divided – 2 tbsp of neutral oil

Using a food processor, blender or immersion blender, add the lima beans and vegetable broth and pulse until roughly chopped. Don't overdo it, though. The beans should remain chunky.

In a medium saucepan, heat the lima bean mixture, sage, rosemary, salt, and pepper until bubbling.

Add in 4 tablespoons of cornmeal, stirring until the mixture becomes thick and bubbling. Remove from heat and allow to cool.

Use a ⅓ cup and scoop the mixture onto your hand.

Using your hands form small balls of the mixture and flatten them into patties, cover with the remaining cornmeal, and fry in oil on medium heat until both sides are browned, approximately 5 minutes each side.
