This one-pot Mushroom Orzo soup is simple, delicious, and full of hearty flavors. Tender mushrooms combined with tasty Orzo in an herb-infused, soothing broth.
– 2 Tbsp of olive oil– 3 garlic cloves pressed– 1 C of diced yellow or red onion– 3 C of sliced white or button mushrooms– 7 C of vegetable broth– 1 bay leaf– ½ tsp of dried rosemary– ½ tsp of dried marjoram– 2 tsp of sea salt plus more to taste, if desired– ½ tsp of freshly ground black pepper– 1 C of uncooked pasta– 1 C of thinly sliced kale leaves
Add mushrooms, cook, and stir for an additional 2 minutes. Next add the broth, bay leaf, rosemary, marjoram, salt, and pepper and bring to a boil over medium-high heat.
