Peppermint Patties

You'll love these homemade vegan peppermint patties. They are so delicious and you will know exactly what's in them.

Ingredients

– 2 1/2 C of Powdered Sugar – 1 1/2 Tbsp of Agave or liquid sweetener – 1 1/2 Tbsp of Water – 1/2 tsp of Mint Extract (I used 1/2 tsp of minced dried mint) – 1 Tbsp of Shortening (I used Trans Fat Free Nature's Balance) – 1 1/2 C of Non-Dairy Chocolate Chips (I used Guittard Semi-Sweet)

Using a hand mixer or a food processor, mix the sugar, agave, water, mint and shortening until its a thick dough.

Kneed the dough into a ball and then roll out into a 1/4 - 1/2 inch thick slab. Put in the freezer for 10 minutes. Cut small rounds out of the slab (I used a shot glass to get them a great size and shape) and put them back into the freezer for 10 minutes.

Using the microwave, a double boiler, or a smaller pot in a larger pot with water in it on medium heat, melt the chocolate chips until smooth. Don't burn!

Put wax or parchment paper down on a baking sheet, and put small dabs of chocolate on it to coat the bottom of the patties. Place the patties on the dabs, and cover with melted chocolate. The trick is to keep the patties frozen, so you may want to keep them in the freezer while you're coating the others.

Put back in the freezer for 20 minutes or until frozen solid. Keep in a bag in the freezer and enjoy!
