This no-bake fall treat is sinfully delicious, gluten-free, and is ready to be frozen in just 15 minutes.  Make a big batch and have a ready-to-devour delicious dessert anytime you want one!

Ingredients – 6 pieces medjool dates – ¼ C pumpkin puree – ¼ tsp pumpkin pie spice – ¼ tsp vanilla extract optional – ½ tsp maple syrup or agave -optional – ½ C chocolate chips melted – 1 Tbsp chopped nuts for garnish (optional) – Pinch sea salt optional

Instructions – Slice the medjool dates halfway lengthwise the length of the whole date, but make sure to not cut it all the way through widthwise. – In a small bowl, mix together the pumpkin puree, pumpkin pie spice, vanilla extra (if using), and maple syrup (if using).

Instructions – Fill the center of each date with a spoonful of pumpkin puree. – Dip half of each stuffed date into the melted chocolate. – Sprinkle the melted chocolate with the chopped nuts and sea salt (if using). Place in the freezer for at least an hour and enjoy frozen.

How to store Pumpkin Stuffed Dates? Place your frozen stuffed dates in airtight containers or ziplock bags and keep them frozen for up to a week.
