– 1 1/2 C of rinsed quinoa
– 3 C of water
– 4 Tbsp of extra-virgin olive oil
– 2 limes, juiced
– 2 tsp of ground cumin
– 1/4 tsp of cayenne pepper, or more to taste
– 2-3 vine-ripened tomatoes
– optional: a couple Tbs of salsa
– 1 1/2 C of cooked black beans
– 1/3 of a large chopped yellow onion
– 1/4 C of fresh cilantro, chopped
– black pepper and salt, to taste
