Roasted Tomatoes

Looking for simple ways to use up those cherry tomatoes you've been growing? These delicious Roasted Tomatoes are the perfect way to enjoy them!


– 3 1/2 C of halved cherry tomatoes – 5 garlic cloves, chopped – 1 tbsp of minced Italian parsley – 1 tbsp of minced basil – 1 tbsp of olive oil – 1/2 tsp of balsamic vinegar – 1/4-1/2 tsp of salt (depends on your saltiness preference) – 1/4-1/2 tsp of red chili flakes (optional for spice) – Fresh minced basil and minced Italian parsley, for garnish

Preheat the oven to 375 degrees F (190 degrees C), and line a baking sheet with a silicone mat or parchment paper.

In a large bowl, add all the ingredients and thoroughly mix together

Place the tomato mixture onto the prepared baking sheet and bake for 25 minutes, or until all the tomatoes look roasted.
