– 8 oz of linguine– 2 medium carrots– 1/2 C of chopped verts or green beans– 1/2 C of chopped cilantro– 4 garlic cloves, minced– 1 Tbsp of fresh grated ginger– 1/2 C of soy sauce– 3 Tbsp of sweetener (I used a mayple syrup agave blend) OR brown sugar if you don't have any liquid sweetner– 2 tsp of rice vinegar– Optional- add beans to make it more filling, I like pinto
Cook linguine according to packageWhile that cooks prepare the sauce by combining the garlic, ginger, soy sauce, sweetener, and rice vinegar in a small bowl and mix
When pasta is done, drain, and put back in the pot. Add in veggies and HALF the sauce. If you're not going to eat it right away you'll need the extra sauce because it absorbs into the noodles. So save the other half for when you're ready to eat it. Cook it just a bit to take some of the bite out of the raw garlic. Toss in cilantro once removed from heat.
