Simple Curry Roasted Broccoli

This Indian curry roasted broccoli combines curry paste with a handful of pantry staples for a simple, moreish dish.


- broccoli - cashews - canola oil - water - curry paste - sugar - salt

First, preheat the oven to 400F/205C and line a baking sheet with parchment paper or a silicone mat.

At the same time, prepare the broccoli by separating it into bite-sized florets and trimming the stems/leaves.

Rinse the broccoli florets, shake off any excess water, and then toss them in a large bowl with the cashews and oil.

Transfer the broccoli to the prepared baking sheet, spread them out, and roast for 20 minutes, stirring once while baking.

Meanwhile, prepare the curry glaze by combining the curry paste, sugar, salt, and water in a small bowl.

Remove the broccoli from the oven and drizzle with the curry glaze.
