In need of a dip? Have an abundance of spinach? Let me help you whip something up that’s great as a chip or veggie dip or as a spread for sandwiches.
– 6 oz of spinach
– 2-3 tbsp of oil
– 3/4 of a yellow onion, diced
– 3 large garlic cloves, minced
– 3/4 C of raw cashews soaked for 2 hours
– 4 oz of soft tofu
– 1/2 tsp of salt
Wilt spinach in a pot on the stove then set aside.
Heat oil and add diced onions, cool until translucent. Then add minced garlic and cook another 30 seconds or so.
Add ALL ingredients into a blender and blend until smooth!
Grab some chips and enjoy!
