– 6 oz of spinach– 2-3 tbsp of oil– 3/4 of a yellow onion, diced– 3 large garlic cloves, minced– 3/4 C of raw cashews soaked for 2 hours– 4 oz of soft tofu– 1/2 tsp of salt
Wilt spinach in a pot on the stove then set aside.Heat oil and add diced onions, cool until translucent. Then add minced garlic and cook another 30 seconds or so.
