Super-Easy Pumpkin Soup
If you're a fan of uber simple recipes, then this two ingredient super easy pumpkin soup will be at the top of your list! So good!
– 3 C of pumpkin
– 2 C of coconut milk
– black pepper to taste
– salt to taste
– chili flakes
– balsamic reduction to top with
Cut the pumpkin in any pieces good enough to be blended later. Season the pumpkin with some salt and pepper.
Roast the pumpkin in a baking tray. This should take about 20 minutes.
Once the pumpkin is tender, place it in the blender with the rest of the ingredients.
Blend until smooth. If the soup is not warm enough you can transfer to a pot and heat it up for a few minutes.
Serve with some chili flakes on top. You can also drizzle it with some balsamic reduction.
