The Chili: – 1 can of kidney beans, drained and rinsed – 1 can of black beans, drained and rinsed – 1 can of chickpeas, drained and rinsed – 1 onion, chopped – 1 C of celery, chopped – 1 carrot, chopped – 1 C of sweet potato, cubed – 1 C of corn kernels, fresh or frozen – 28 oz of chopped tomatoes (or 3-4 cups fresh tomatoes) – 1-2 tbsp of chili powder – 1 tsp of salt, or smoked salt (to taste) – 1 tbsp of maple syrup, or sugar – 1 tbsp of turmeric – 1 tbsp of paprika Crispy Corn Cakes: – 1 C of corn meal – 1 C of all purpose flour – 1/2 C of coarse cornmeal (polenta) – 3/4 tsp of salt – 1/2 tsp of baking powder – 2 tbsp of maple syrup – 2 tbsp of olive oil – 1 - 1 1/2 C of water
