Vegan Walnut Oat Scones

These walnut oat scones are hearty, wholesome, and the perfect addition to any breakfast spread or to enjoy alongside a cup of tea or coffee!

Ingredients

-½ C of plant-based milk – 1 tsp of vinegar – 2 tbsp of vegan butter – 1 ¾ C of rolled oats – ¾ C of all-purpose flour – ¾ C of whole-wheat flour or sub for all-purpose flour – ¾ C of granulated sugar – 1 tbsp of baking powder – ½ tsp of baking soda – ½ tsp of salt – ½ C chopped walnuts + more for the tops – 2 tbsp of canola oil – ¼ C of brown sugar

Preheat the oven to 425 degrees F; spray cookie sheet with nonstick cooking spray, or parchment paper or my new favorite: a silicone pad!! Mix together the milk and vinegar and set aside.

Combine dry ingredients and walnuts in a large bowl, mix well. Melt the vegan butter and combine in a small bowl with the sour plant-based milk, and oil; add to dry ingredients and stir until just mixed.

Turn the dough onto a lightly floured surface and knead a few times to form into a ball; flatten the dough into an 8-in.-diameter circle and cut into eight wedges.

Sprinkle the brown sugar on top of the scones, place more walnuts on top Put the wedges on a prepared cookie sheet and bake for 12 to 15 minutes, until lightly browned. Cool slightly on a cooling rack.
