Vegan Pumpkin Waffles 

These oil-free, dairy-free, and eggless Vegan Pumpkin Waffles are a healthy and delicious way to infuse winter flavors into your breakfast!

Ingredients

– 2 ½ tbsp water warm – 1 tbsp ground flax seeds – 1 ¾ C vanilla Plant Folk creamer – ⅓ C pureed pumpkin – 1 ½ tsp vanilla extract – 2 C all-purpose flour whole wheat will work – 1 ½ tbsp granulated sugar – 1 tbsp brown sugar – 3 tsp baking powder – ¼ tsp salt – 1 1/2 tsp pumpkin spice

Turn on your waffle iron. In a small bowl, whisk together the warm water and ground flax seeds until thoroughly combined. Set aside for 10 minutes.

In a medium bowl, whisk together the Plant Folk creamer, pureed pumpkin, and vanilla extract. Set aside.

In a large bowl, whisk together the flour, both sugars, baking powder, salt, and pumpkin spice.

Create a well in the center of the dry ingredients and pour in the milk mixture and flax mixture. Whisk gently, just until combined. Make sure to not overmix.

Scoop the desired amount of batter onto the preheated waffle iron. Follow your waffle iron instructions to cook. Repeat with the remaining batter until all the waffles are cooked.
