– 1 1/2 sourdough baguettes, diced– 1/3 C of vegan butter– 1 medium yellow onion, diced– 2 ribs of celery, thinly sliced– 1 large granny smith apple, diced– 2 links of your favorite vegan sausage (diced)– 1 1/2 Tbsp of chopped fresh sage– 3 tsp of chopped fresh rosemary– 1 tsp of chopped fresh thyme– 1/3 C of minced fresh parsley– 3/4 C of dried cranberries– 1 3/4 C of vegetable broth
In a large skillet over medium heat, heat the vegan butter. Add the onion, celery, apple, and vegan sausage (if using), and saute for 5 to 7 minutes, or until vegetables are tender.
