Yam and Avocado Sandwich

I love combining different veggies to create different sandwiches to share. The one features yam and avocados. So good!

Ingredients

– 1 medium yam, peeled – 1 avocado, sliced – 1/2 medium red onion, sliced – 3 cloves garlic, minced – 1/2 teaspoon of olive oil – 1 tomato, sliced – romaine lettuce or sprouts – 2 loaves of ciabatta bread any bread will work though

Slice yam length-wise at about 1/2 inch width. Fill medium size pot half way with water and bring to a boil. Add yam and boil for 5-7 minutes, until you smoothly stick a fork through yam. Once yam is tender, drain and set aside.

In a medium size pan, saute olive oil, red onion and garlic until onion becomes translucent. Add the yam and mix so it can absorb the onion and garlic flavor. Let cook for 1-2 minutes.

While I saute the onion and garlic, I also like to throw the bread in the toaster oven for a few minutes, which it totally based on your preference.

Cut the loaf in half length-wise (I cut it like they do at a sandwich shop, not going all the way through), add yam, avocado, red onion and garlic, tomato and lettuce. You can also add any wet ingredients (mustard, mild hummus, etc).The sandwich is pretty huge, so I cut mine in half and shared with my boyfriend. Enjoy!
