This Lima Bean Vegan Sausage is an excellent addition to your breakfast or brunch rotation. Enjoy these juicy, firm, and flavorful vegan sausage patties packed with wholesome ingredients done in just 25 minutes. It's quick, easy, and very healthy!
Using a food processor, blender or immersion blender, add the lima beans and vegetable broth and pulse until roughly chopped. Don't overdo it, though. The beans should remain chunky.
In a medium saucepan, heat the lima bean mixture, sage, rosemary, salt, and pepper until bubbling.
Add in 4 tablespoons of cornmeal, stirring until the mixture becomes thick and bubbling. Remove from heat and allow to cool.
Use a ⅓ cup and scoop the mixture onto your hand.
Using your hands form small balls of the mixture and flatten them into patties, cover with the remaining cornmeal, and fry in oil on medium heat until both sides are browned, approximately 5 minutes each side.
Notes
You should still see chunky pieces after blending the beans. If you overdo it, the mixture will turn mushy, and it will be challenging to shape them later on.
If the mixture is too watery after mixing, add some cornflour to thicken it a bit more until you get to the right consistency.
Rub your hands with a bit of oil or water to make rolling the lima bean mixture easier and less sticky.
Practice cooking a small portion of the mixture and taste to ensure you have the perfect amount of spices and seasonings. Make the necessary adjustments if needed.
Add a dash of rep pepper flakes or chili powder to your vegan sausage mixture to add some kick!
Layer a piece of wax or parchment paper between your patties individually to keep them from sticking together.
