Buckwheat groats are super healthy and have a great taste. After you make the groats you can eat it with the cashew cream and apples or even just with milk like regular cereal.
1/8teaspoonof stevia (I used coconut sugar mixed with stevia) or any sugar
BAKED APPLES
2apples
1Tablespoonof coconut oil
1teaspoonof vanilla extract
1teaspoonof cinnamon
pinch of salt
CASHEW CREAM
2cupsof cashews
1/2cupof maple syrup
1/4cupof lemon juice
1teaspoonof vanilla extract
pinch of salt
1/2cupof coconut oil
Instructions
FOR THE GROATS
.Soak buckwheat groats for at least one hour, then rinse.
Combine all remaining ingredients in a medium-sized bowl.
Mix thoroughly.
Spread on a teflex sheet and dehydrate overnight or bake on a silpat in oven at 200 degrees for 1 hour
Pour milk over it. Cereal. Done. (Or keep reading for an even better way of eating it!)
FOR THE BAKED APPLES:
Cut two apples into small slices, toss with coconut oil, vanilla, salt and cinnamon Spread onto a teflex sheet and dehydrate overnight, or bake on a silpat sheet in the oven at 200 degrees for 1 hour
FOR THE CASHEW CREAM:
Soak cashews for at least 1 hour, then strain and add to food processor.
Add maple syrup, lemon juice, vanilla, salt and coconut oil then blend.
Assemble by placing roasted apples, crumble, and optional cream in layers to make a breakfast parfait.
