Preheat the oven to 350 degrees F.
In a large bowl, mix together the applesauce, oil, sugar, zucchini, and vanilla in a bowl. Then add the remaining ingredients and whisk until thoroughly combined.
Pour the batter into a greased loaf pan and bake for 50 to 55 minutes.
Notes
Wash and peel the apples: Take the time to peel the apples with a vegetable peeler before you grate them. The skin doesn’t break down well as it cooks, so you’ll end up with stringy pieces in the bread.
Instead of grating the apples: Chop them into small chunks instead!
