Preheat the oven to 225 degrees F (107 degrees C). Slice apples into very thin rings. I leave the core in because I think it makes a prettier apple chip, but you can remove it if you like.
Place the apple rings on a lined baking sheet in a single layer.
In a small bowl, mix together sugar and spices. Sprinkle over apple rings.
Place the baking sheet in the oven. Baking time will depend on the thickness and water content of your apple slices. They should be done in 1 ½ to 2 hours. You’ll know they’re finished when they’re crisp.

Thin slices are best! If you slice the apples more than 1/8 inch thick, they will still be delicious, but they won’t be as crisp.
Enjoy these oven-baked apple chips chopped on top of salads, on top of oatmeal, and, of course, right out of the container!
Use crisp apples and avoid soft apples such as Red Delicious and McIntosh apples. They aren't that great for cooking and definitely don't work as well as other crisp varieties.
