Scoop out the avocado pulp and add it into a blender with the coconut milk, sugar, and ice. You can put as much ice as you would like into the shake, depending on the consistency you prefer. If you use 1 cup, it will be silky and more like a smoothie. With 2 cups it will be more icy, much like a traditional shake. Play around with it!
Slice the lemon in half and squeeze the juice into the blender. Be sure not to let any seeds slip into the mixture.
Blend until nice and smooth. You may want to add more sweetener or use less lemon if you prefer a little sweeter shake.
Serve and watch the smiles begin!

Notes
This is a traditional Vietnamese drink called Sinh To Bo and usually contains condensed milk. For a plant-based option, we use coconut milk, which is similar to condensed milk inconsistency.
We prefer evaporated cane juice as our sweetener, but agave, sugar, or any sweetener of your choice will work just as well.
