Ingredients
1smalloniondiced
4clovesof garlicminced
2cupsof vegetable broth
15ouncesfire roasted tomatoes
6ouncestomato paste
4Tablespoonsof chili powder
1cupof Mexican beer
1teaspoonof apple cider vinegar
1teaspoonof ground cumin
1/2teaspoonof ground coriander
1/2teaspoonof oregano
1/4teaspoonof black pepper
3dried chile peppers
15ouncesof kidney beansdrained and rinsed
15ouncesof black beansdrained and rinsed
3Tablespoonsof lime juice
Instructions
In a large non stick or oiled sauce pan, cook onions and garlic.
Add all remaining ingredients except the beans and simmer for 45 minutes.
