I love these cookies! I know they’re not extremely healthy because of the butter and sugar, but the fact that they have fruit and nuts makes me feel less guilty about eating them.
1/2teaspoonof baking soda (dissolved in 1 tablespoon warm water)
1/2cupsof semi-sweet chocolate chips
1cupof old-fashioned rolled oats
1/2cupof chopped, unsalted nuts (or nuts of your choice)
1/2cupof dried cranberries (any bite-sized or diced dried fruit would be tasty)
Instructions
Preheat oven to 375 degrees and line cookie sheets with parchment paper. In a large bowl, cream the butter and the shortening with the sugars and beat in the applesauce, banana, baking soda mixture, flour, salt, and vanilla.
Stir in the oats, chocolate chips,nuts, and dried fruit. Drop rounded tablespoons of the dough about four inches apart onto greased baking sheets and flatten each mound into a round, about three inches in diameter.
Bake the cookies in batches in the middle of a preheated 375°F. oven for about eight minutes, or until they are golden, transfer them to cooling racks, and let them cool.
