Ingredients
2cupsof flour
1teaspoonof baking soda
1teaspoonof baking powder
2teaspoonsof sugar
1/4teaspoonof salt
2cupsof soy milk
2Tablespoonsof vegetable oil
Fruit of your choice - I used strawberries and blackberries
Wooden Skewers - cut into 4-5' pieces
Condiments - syrup or coconut whipped cream
Instructions
Heat up your grill or non-stick frying pan
Mix all the dry ingredients together
add the soy milk and veggie oil and mix just until combined. Don't overmix!
When water bounces on your pan, its hot enough. Then pour on a couple of pancakes, and cook until the middle begins forming bubbles. Flip your cakes and cook the other side until golden.
Slice some your fruit, and use a paring knife to carve some strawberry hearts. Chop your pancakes into bite-sized pieces, and start stacking! You can top with the coconut whipped cream and/or syrup or agave.
