I had a bunch of veggies in the fridge and threw this together. It came out really good, and went great with the BBQ tofu. I used a grill basket. If you do not have one, you can make one with foil.

Ingredients
1mediumEggplant
1Squash
1Zucchini
3Carrots
1headof Broccoli
1teaspoonof Pepper
1/2teaspoonof Salt
1teaspoonof Onion Powder
1teaspoonof Garlic Powder
Instructions
Mix all seasonings together in a small bowl and set aside.
Dice up all the vegetables and place in a large bowl with a lid, or ziplock back.
Pour seasoning mix into bowl or bag and toss. Continue to toss until the veggies are covered with the seasoning mixture.
Place veggies in a grill basket and cook on grill until veggies have softened.
