It’s like you can make your own veggie bowl like you have at the restaurant Chipotle, at home! You can pretty much do whatever with this– it’s simple and versatile. Enjoy!

Ingredients

cups
of brown rice, cooked
2
cans
of pinto beans
3
cups
of shredded lettuce

ounces
of frozen corn

onion, diced (red, yellow, or green, your choice)

avocado, diced
1
cup
of salsa
1/4
cup
of fresh cilantro, chopped (optional)
(optional) 1 green bell pepper, sliced in strips, and sautéed with a bit of water and cumin
Instructions
Precook the rice since it takes the longest. Heat up the beans and corn in separate sauce pans.
In each bowl or plate, layer rice, then beans, onion, corn, avocado, salsa, and pile the cilantro and lettuce on top. Add any other veggies you like.
