1packageof tater tots (sweet potato tots work well for this too!)
1canof black beans (better if you make your own from scratch)
3/4cupof vegan cheese
1cupof brown rice or quinoa
1containerof salsa of your choice
2avocadoscubed
Instructions
Preheat oven to temperature designated on tater tot package.
Add 1 cup of brown rice or quinoa to a small pot and briefly saute in oil to brown the outside. Add 2 cups water and bring to a boil. Lower heat to simmer, cover with lid and allow 20-25 minutes to cook. A rice cooker does this even easier and faster.
Bake tots in the oven as directed.
Empty your can of beans into a small pot and warm them up. If using black beans, try adding diced green chiles or jalapeno, 1 tbsp cumin and 2 bay leaves to the mixture to flavor them. When you’re ready to serve, simply strain off the liquid.
Once the tots are about done, pull them out and cover them in your cheese. Return to the oven for 2 minutes, then broil for another 2. BE CAREFUL, broiling can burn food very quickly so be sure to keep an eye on this, it will melt the cheese quickly though.
Now that your rice or quinoa is done, add half the container of salsa to it and mix it around.
Remove tots from oven, put them on a plate and dump all remaining ingredients on top into a big tasty pile. Add hot sauce of your choice.
Notes
Try using "crispy crowns" which are flat circles instead of tater tots. Even more like nachos!
