2Tablespoonsof liquid sweetenerI use an agave/ maple syrup mixture
2Tablespoonsof melted coconut oil
½ripe banana
¼cupof rolled oatsleft un-blended
¼cupof chocolate chipsor cacao nibs to make it raw
Instructions
Take the first 3/4th cup of rolled oats and blend in a blender or food processor to make a course oat meal. It doesn't need to be as fine as oat flour though.
Add the remaining ingredients except the chocolate chips and blend or process them again.
Stir in the chocolate chips and 1/4 cup of the whole rolled oats.
Form balls and put them in the fridge to set.
Notes
Spices. Aside from cinnamon, you can also add nutmeg, ginger, or cloves.
Nuts. Add walnuts, almonds, and cashews if you’re looking for that extra crunch.
Dried fruits. Raisins or cranberries will provide some tartness and chewiness to the cookies.
Peanut Butter. Add a dollop of this for more flavor! Who does not love bananas and peanut butter together?
More vegan chocolates. If you can’t get enough of chocolate, use chunks instead of chips. Or you can also drizzle the cookies with a vegan chocolate glaze before chilling them.
