Moist Banana Bread
There is a point where brown bananas go from a snack, to smoothie bananas, to baking bananas. This bread uses them up so you can still enjoy them.

Ingredients
2 1/2
cups
of flour
1 1/2
teaspoons
of baking powder
1
teaspoon
of baking soda
1/2
teaspoon
of salt

medium
overripe bananas mashed
3
Tablespoons
of ground flax seed mixed with 3 Tablespoons coconut water (or regular water)- let is 5 minutes
1/2
cup
of vegetable oil
1
cup
of sugar
1
teaspoon
of vanilla extract
1
cup
of coconut milk (I used Trader Joe's canned coconut cream)
Instructions
Preheat over to 350°
Flax ground flax seed and water and let sit 5 minutes
Combine flour, baking soda, backing power, and salt
Mixed mashed bananas, oil, sugar, vanilla extract, coconut milk or cream, and flax mixture once 5 minutes is up.
Slowly add wet ingredients to the dry ingredients.
Pour into 9 x 5 loaf pan and bake for 70 minutes or until a toothpick comes out clean.
