This vegan Thai pizza recipe really hits the spot. A savory peanut sauce, instead of the traditional red sauce, with the flavors of coconut milk and agave for just the right amount of sweetness. This vegan pizza recipe creates a winning fusion of flavors to elevate your next pizza night!
Prepare pizza crust according to package instructions.
For the sauce, add all ingredients and tofu into a pot and stir together under the lowest heat. Cook for 4 to 5 minutes.
Top the pizza crust with the sauce and tofu and add all toppings, reserving 1/4 cup of cilantro.
Bake until the pizza crust is golden brown. Mine baked for 20 minutes. Once it's done, top with remaining cilantro.
Notes
Use crunchy peanut butter: For more texture than creamy.
For meal prep: When making the sauce in advance, heat it before adding it to the crust to bake.
Make it spicy: If you like your Thai flavors with a little spice, add a bit of Sriracha, red pepper flakes, or diced fresh chili to the sauce or simply drizzle it over the top just before serving.
