Walnuts are super heart-healthy and because of their good fats, they make an amazing meat substitute.

Ingredients

cups
of California walnuts
15
ounces
of garbanzo beans, drained
1/4
cup
of vegetable oil
1/2
Tablespoon
of white vinegar

teaspoons
of salt
2 1/2
teaspoons
of dried oregano

teaspoons
of ground chipotle
2
Tablespoons
of ground cumin
2
teaspoons
of ground coriander
2
teaspoons
of nutritional yeast (optional)
Instructions
Combine all ingredients in a food processor and pulse until walnuts are the size of a grain of rice.
Transfer walnut chorizo to a skillet and cook on medium-low heat until warmed through.
Serve warm or reserve until ready to use.
Notes
Walnuts are one of the meatiest nuts there are, so I don't recommend any substitutions here.
