Ingredients
5ouncesof oyster mushrooms
1/2ounceof baby spinach
A couple of cherry tomatoes
1Tablespoonof barbecue sauce
2slicesof your favorite bread
Instructions
The only thing here that requires cooking are the mushrooms. Tear them into thin strips and cook them on the grill pan, with some olive oil. It takes 5 minutes!
Season them with salt and pepper and toss them in some BBQ sauce so they get nicely coated.
Assemble your sandwich and enjoy!

Oyster mushrooms are the steak of the fungi world. If you can't find them or are in the mood for something more familiar, feel free to use portobello caps.
