10ouncesof Path of Life (almost) Scratch Brown Rice & Quinoa
1 1/2Tablespoonsof fresh lemon juice
1 1/2Tablespoonsof fresh lime juice
2Tablespoonsof packed freshly minced cilantro
15ouncesof black beans, drained
3/4cupof corn kernels
1largeavocado, pitted and sliced
2cupsshredded lettuce
2roma tomatoes, diced
1/2cupof diced red onion
1jalapeno, sliced (optional)
Hot sauce, optional
Instructions
Cook the Path of Life (almost) Scratch Brown Rice & Quinoa according to the package instructions.
Stir in lime and lemon juice and minced cilantro.
To assemble, add about ¾ cup of Path of Life (almost) Scratch Brown Rice & Quinoa to three bowls, top each bowl with ½ cup of black beans, ¼ cup of corn kernels, ⅓ of the avocado slices, lettuce, tomatoes, red onion, and jalapeno (if using). Drizzle with hot sauce, if using.
